For the UBER difficulty trophy, you need to have an unpatched 1.00 game version.

Resign and load "UBER + COLLECTIBLES" save-set.
Resume Game and defeat the last boss (this might be difficult but still easier than beating the whole game on uber difficulty).

Resign and load "UBER + COLLECTIBLES" save-set and follow the path shown on the video from the downloaded folder.
