I've switched off the internet connection before entering the game and when loading the save all the trophies pop up, so that works like a charm. In offline mode I can see all the trophies (platinum included), but when I go back online, none of them are visible and it doesn't even show the game in my trophy list.

Any idea why this is happening?

this must be an error with your psn friend because in relation to the platinum of the game there is no error I hope you can solve it
