Yes, you can still play physical discs on the PS3 and earn the trophies
You're able to sign into PSN still and sync the earned trophies,
and also be able to download what you had purchased previously via your library
(I haven't been on my PS3 for about a year now, but can't see why you wouldn't be able to)
Why don't you just turn on your PS3, sign in and play a physical game to find out?

- I don't have one yet hahaha lol, just PS4 and PS5.

As far as I know, the PS3 and Vita PSN stores are still open. You have to add money to your wallet (via credit card or PSN card) before buying from those stores. You just can't buy things directly with credit cards or PayPal or anything anymore.
There may be some PSN store closures in certain countries that I'm not aware of.
